Comments (2)My favorite glaze for baked ham is the mustard brown sugar vinegar one....but maybe not with the bacon wrapped brown sugar little smokies? Here is is anyhow Depending on the size of the ham....can be doubled. cup or brownsugar, mixed with 1 1/2 tsps of Coleman's dry mustard and enough cider vinegar to make a paste....about 1 to 2 tablespoons full. Comments (7)HARVARD BEETS 2 lbs medium beets, tops removed 1/3 cup sugar 2 tBL cornstarch 1 tsp salt 1/4 tsp pepper 1 cup cider vinegar 1/4 cup water 3 TBL butter or margarine Boile beets in skins in covered, large heavy saucepan of lightly salted boiling water 40-45 minutes until tender. Drain, quick-chill in ice water, then peel & trim off stem & root ends. Slice beets thin & reserve. Mix sugar, cornstarch, salt & pepepr in a pan & slowly blend in vinegar. Add water & butter & cook over moderate heat, stirring constantly, 3-5 minutes until mixture thickens & clears. Return beets to pan & turn gently in sauce. Reduce heat to lowest point, cover & simmer beets 10 minutes. Comments (2)The double processing (double canning) will make them quite mushy. That is one reason why it isn't recommended - the poor quality that results. In other words, it isn't a safety issue (assuming you use approved instructions), it is a quality and efficient use of time and energy issue instead. The approved instructions for making pickled beets is Pickled Beets please note that it calls for a vinegar to water ratio of 2:1 rather than the 1:1 you propose. Comments (1)Old recipes need to be updated due to further research and testing outcomes. Use the new recipe. A 10 minute processing time probably didn't allow for proper penetration of the acid into the mass of the beet.... that's just a guess... I'm no scientist... lol.. ps I love pickled beets....See More
