Comments (9)The recipe for Cepaille came from my MIL, it's pretty easy. Any kind of animal will do, the more variety the merrier. SMALL CEPAILLE 2 chicken breasts - raw cubed 2 pork chops - raw cubed 2 steaks - raw cubed 1/2 cup diced onion - raw 1 tsp Allspice 1 cup cubed potato - raw 3 cups chicken broth (approximatly) pie crust (for the top only) combine meat, onion and allspice in a casserole dish (you want a fairly deep one, leave some room at the top it tends to boil over) cover and refrigerate overnight next day, add potatoes and enough chicken broth to just cover the meat. cover with pie crust and bake at 350f for 3 hours, checking the level of the broth periodically (DO NOT let it dry out) add more broth if necessary. I usually make a big one, and put it in the oven at the same time as the turkey. You want a slow cook, so the meat is falling apart when you eat it. Family tradition involves eating this with copious amounts of ketchup. I find it is an aquired taste. The allspice with the meat kind of weirds me out. Comments (20)I was just here checking to see if anyone was still canning anything, since I canned beef broth today. I raised the heritage Blue Slate turkey that we had at Thanksgiving, along with the fingerling potatoes which store very well in the cellar. Pumpkin pie was made from home canned pumpkin and an appetizer of a savory cheesecake was topped with my Habanero Gold. Mulled cider from cider we pressed and I had in the freezer stayed warm in the crockpot. Christmas thumbprint cookies contained homecanned jam and the green beans were from my basement "store" and my stepson roasted another one of those turkeys. The guys all doused theirs with my home canned hot sauce. All the Christmas baking was done with eggs from the freezer too, and the pie was made with homecanned apple pie filling. Throughout the holidays we snacked on fresh tortilla chips and salsa that I had canned (Yes, I'm THAT Annie). Oh, I made the ricotta for the lemon ricotta pancakes too, as well as the yogurt. Enchiladas made with leftover turkey were topped with tomatillo sauce that I made and froze when the last of my tomatillos vines were threatened by frost. My kids are coming over tomorrow and we're having beef roulades, with the onions in the rolled beef coming from the root cellar and the beef from my barnyard, good organic grassfed beef, a Hereford/Highland cross. Sweet and sour kale from our bumper crop of greens this year, home canned green beans with bacon for the grandkids and the cheesecake will be topped with homecanned blueberry topping. Comments (10)When I get home for Christmas I will find the house filled with every kind of rich, store bought sweet imaginable bought by my diabetic mom! She always buys way more than they need, and my dad is one of those people who wolfs down food so potato chips or italian wedding cakes all taste the same to him. What I try to do is pick one thing to savor with mom over afternoon tea. That tradition goes way back in her family and I grew up with it. So when I see something around that would pile on the calories if I ate it mindlessly, I tell myself "You can have this with afternoon tea, won't that be nice." You can do the same with some yummy dinner treat you love but is very rich, just eat light the rest of the day. It just takes planning. Mitchdesj, I totally hear you on that one!! That's why I love the holidays, lots of friends and family visits allow me to unload some of the goodies I love to bake. Also I now put a lot of stuff in the freezer. But I don't bake as much as I would like either. Luckily, my new obsession with the breadmaker and the 350 recipes in my new bread machine cookbook are filling the gap. It goes well with my jam obsession. So I don't miss the baking that much, lol! It takes a lot of willpower though for me to go to the farm market and pass by all the goodies. The only positive thing about being broke is it is a powerful incentive to avoid bakery and deli items! But I don't think people should beat themselves up about holiday treat eating, it takes all the enjoyment out of it. That's why I liked this post so much, I think it is a good recipe for truly enjoying food and traditions. Also I totally get stressed around the holidays sometimes and that is when I just grab something quick or available, which is usually not something I even WANT, and usually also not healthful. Comments (29)I have to laugh at the "bugs in the flour" reactions. When I was a kid we lived overseas in Brazzaville (in the Congo in Africa); San Salvador, El Salvado; and Rio de Janeiro, Brazil. When you used flour you sifted it to make sure you got any bugs out. Granted, this was in the 60's and early 70's, but no one ever got sick from the flour after it was baked or cooked. You also checked the cereal, rice, etc. One time, about 10 or so years ago, my Mom and brother were doing the Nutri-System diet. They send out prepackaged food. On the forums, someone mentioned they found a bug in their food, were outraged, and called Nutri-System. The company said they would replace the product or offer a refund. The person wanted some other type of compensation. I told my Mom about it and she said "I lived too many years overseas to let a little bug bother me."
