Basic questions about grafting tomatoes

I recently discovered that this is a thing and am eager to try it, but maybe learning and practicing a bit before blowing big money on fancy rootstock seeds. I understand that disease resistance is the biggest benefit, but do you also potentially get stuff like better fruit production, earlier production, better drought tolerance, etc? Leaving aside the expensive rootstock seeds (at least until after I've developed my technique) are there any of the "regular" tomato varieties that people like to use for rootstocks? I'll be growing outdoors in a fairly cool (coastal california) climate, if that matters. Thanks
