Long day vs short day onions

I live in central California, Every year I plant Walla Walla and Red onions and these do very well considering the walla walla are a long day onion and not advised for this far south. My onion zone is for Intermediate day onions. I usually plant the sets in November and harvest in June. I have noticed around the Stockton area that they grow onions in the fields that they plant and harvest later than mine and I wanted to know more about that variety and planting time. I have planted the white variety before but they bolted and went to seed. That could have been my fault for lack of water and care. This year the nursery had 4 different types and I planted all 4 so I am hoping all 4 make it to bulb. I thought that maybe the White onion wasn't a good choice for my area . But the nursery shouldn't sell it if that's the case. I know that moisture is critical in the bulb development so I mulch them and have a strip of drip tape in the center of the double row.
