American Range wall oven broiler
Comments (5)It took 4 visits from the repair service, but the broiler is now repaired. After posting the scary broiler startup on YouTube, American Range acknowledged there was a problem. On the repair service's second visit, they replaced some parts, but to no avail. They came a third time to test the gas pressure (which was fine). Unfortunately, they also caused a small gas leak, which was not repaired until the fourth visit, 3 weeks later. On their final visit, they replaced another part---the broiler screen---which turned out to be the faulty part. The technicians and I puzzled over how this part could have caused the problem because it appears non-mechanical and is essentially a metal box with a screen attached. In any case, the broiler is now fixed---along with the gas leak. The inconvenience of multiple repair visits (not to mention the gas leak), has made me a little less enamored by my American Range wall oven, but I am sure that in time any regrets will dissipate. Comments (9)I don't have my infrared broiler yet... (about ten days more and it'll be live!) but I plan to use welding gloves as I have been doing for all of my high-heat grilling (where silicon also gets way too hot!) I find that Black Stallion makes great welding gloves (for IR broiler, go for MIG rather than TIG, as the former has heat shielding/padding on the back-of-hand part, whereas TIG gloves do not). Stick welding gloves provide the absolute highest heat protection, but are more heavily padded so you sacrifice dexterity there. For you female high-heat cooks, I have recently started using and highly recommend Angelfire (Black stallion's women-geared welding line) MIG gloves and love them. Comments (8)I can say this about the Wolf ovens we have; they require the door to be shut, and the coils at the top are spaced widely and hence radiant flux at the rack on a broiling pan at the highest oven rack setting is not even. Both of these traits annoy my DW. The latter issue could have been avoided by twice as much heater length using half as much resistance per inch. On a high-end device, the electronics could have been designed so that air cooling was increased when the door was open. The air in such cases would have to be taken from somewhere other than under the electronics where the door gap would be. The negative aspect of such cooking is the near impossibility of keeping grease and moisture off of everything above the door gap. The oven(s) would require a separate vent that led to its own filter and duct to the roof. It is bad enough with closed-door broiling just opening the door to turn the meat or remove it. A auxiliary vent such as I have in the ceiling above the ovens is not adequate for such a blast of greasy air.
