Comments (26)Oweeee, my mouth is watering and I have already HAD breakfast! These menu ideas and traditional menus are awesome. It�s so interesting to see what everyone has for their traditional meals at this holiday! Since my family members are scattered all over the place in different locations, we are not having any type of traditional meal, and I�ve been in a sour mood because of this separation during the holidays. We will have only our youngest son here with his new wife visiting from Chicago, and she eats only vegetarian, so I�m trying to come up with menu ideas that will please her, as well as DH and son, who are big meat eaters. Will probably do some type of local fish, to please son who can�t find it in Chicago, and lots of yummy vegetable sides. Suggestions are always welcome! Comments (16)Everybody's in jeans or whatever's comfortable for them. GKs always have to show off their new jeans, tops, boots, etc. No alcohol - just tea, cokes, water, etc. with our meal. LOL I looked at my DM today and said, "Well, Mama, are you gonna brush your hair out, or just leave it as it is!?" She started laughing, grabbed her head and said, "Oh, Lord! Comments (32)I have finally regained a little bit of function in my arms and hand so I am going to attempt to cook. I have so many people who like one thing or the other that I try to make a little variety in meat. Some don't eat Ham some don't eat Turkey. Sigh. I really don't care for either lol. So on New Years Day I have my perfect dinner for me which is Prime Rib, Roasted Brussels Sprouts and Loaded Baked Potato. That has always been my reward to myself for making Thanksgiving, Christmas Eve and Christmas dinner. I finally get to eat what I enjoy. For Christmas I will attempt to make: Spiral Ham Turkey Sausage Stuffing Regular Stuffing for those who don't like sausage stuffing Butter and Onion Potatoes to go with Ham Mashed Potatoes and Gravy Roasted Asparagus Green Beans Baked Sweet Potatoes Rolls Pumpkin Pie Cranberry Apple Crisp I am going to start cooking what I can on Thursday and everyday until Christmas so I don't overwhelm myself. The last few years with the neurological issues I have had a hard time. I am having people over this year who don't have family to have dinner with and I want to make sure the kids have a nice family atmosphere to have dinner that they wouldn't normally get to experience. It amazes me that only 2 years ago I was doing all of Thanksgiving Dinner for 25 people, Christmas Eve party with full buffet for at least 50 people, cleaning up Christmas Eve night to do a full Christmas dinner for another 25 and then doing a full New Year's Eve party just a week after. After I got sick I just wasn't able to do it anymore and no one picked up and took over so it all just ended. Comments (7)What do you mean by "make"? Do you want fancy made up dishes, like carrot souffle? (which should freeze well), or just plain cooked? There are options for the latter, such as cleaning and blanching now, drying thoroughly, then freezing, which will work well for most vegetables, which you can then finish cooking as you heat them up on the day. Some harder vegetables that take longer to prepare also freeze better than wetter vegetables; these include carrots, celeriac and similar roots. You can dice or slice, roast, and vacuum seal, then freeze, thaw and reheat. They'll soften in the freezer, so don't cook them all the way soft. Try a higher temperature than normal and less time, so the outside is nice and roasty. My own preference when feeding the hoards is to prep the veg 2-3 days ahead of time and keep each one in its own ziploc or vacuum bag. I'm a big fan of freezers, but getting everything thawed correctly so that it's in perfect shape for serving is something I don't even want to think about.
