Why are my squash changing color in storage

Had a bumper crop of kabocha (buttercup). Grew "Sunshine", which is bright orange - looks like small pumpkins. Cured them before putting them in the crawl space. They have been storing beautifully so far (since October), but when I pulled one out yesterday, I noticed some of them are turning green, like the color of a regular buttercup would look. I thought maybe the temp had something to do with it, so checked that and it was about 65 F during the day and 60 overnight. Our temps are in the low 30s days right now, 20s overnight but did have temps in the 10s a couple of nights, but these are stored right next to the wall of the house way on the interior of the crawl, so I doubt the temps fluctuated to any extreme.


Any idea what could be causing the color change? Is the color change anything to worry about - Does this mean the squash will start deteriorating quickly? I roasted one that was about half green, and it tasted fine, no sign of spoilage on interior or exterior.
