I know some folks do this sort of shower with a toilet in it, let me tell you why I wouldn't: I think the toilet would be constantly damp and covered with water spots. Unless you have extremely soft water with no minerals and you only use liquid soaps [generally clean rinsing] and banned most hair products, I think you'd need to get on your hands and knees to dry the toilet after every shower. And remember: a curbless still needs to be lower than the surrounding floor, so the shower either has to be carved into the slab, or the slab will need to be raised. In the process of designing my house, I came up with all sorts of creative ideas to resolve space planing dilemmas. Some worked and I kept them; more didn't, and I had to keep thinking. For me, this would be in the 'keep thinking' column.

I have the same set up that you are planning. My kitchenette/wet bar is 15 foot in length . The area in front of it is tiled and the adjacent living area is carpeted. I had a hard time deciding how much to carpet and how much to tile in the lower level. I didn't want to use too much carpet because our floors are heated and I thought the tile floors would be more efficient. The only reason I have carpet in the living area is because our grand kids hang out down there and I thought carpet would be quieter and more comfortable.

It as so many colors in it, you can go in a lot of directions...take a look at caesarstone ...they have the beiges, the golds, the grays. The quartz products are not only more durable than granite, but the patterns are more consistent and plainer so you won't need to worry about heavy graining competing with the stone pattern.

I'm a total cocktail nerd, so keep this in mind. If you spend any time on Reddit, check out barbattlestations for some ideas. Depending in your budget, I would get a decent undercounter fridge with a small freezer compartment and space to stand up opened bottles. Then a small ice maker either undercounter or countertop. You need to have space to store the countertop model when not in use. Make sure in those cabinets you have a few drawers. This makes it easier to store and access small things like corkscrews, hand juicers, small measuring cups, etc.. I don't know how old you are, but while beer is your focus now you may morph into enjoying wine and cocktails just as much. We were total beer drinkers when we first got married and have now switched out a lot of our beer gear to accommodate new things. You have way more space than we had so it should be easy to have a versatile set up from the start.
