A butter boat for better butter

We were visiting Lehman's hardware store in Kidron OH (kind of a cool store, they sell propane refrigerators and cast iron stoves) and bought a "butter boat". Now, this is clearly not local, it's made in China, but we needed another butter dish so we bought it.




I've heard of butter bells, and maybe this operates on a similar principal: the water in the bottom dish keeps the porcelain of the upper dish cool, or is it vice versa, which keeps the butter cool but not rock-hard. But scientifically, how does that work? The water doesn't evaporate, so don't the water and the porcelain, hence the butter, just become room temperature?


We always keep our butter on the counter anyway, and as long as the AC is on or we don't leave the butter on top of the dishwasher when it runs, the butter is fine.
