Shaker Style Mouldings for renovated kitchen?

We are finally getting ready to start our kitchen renovation thanks to all the help we received so far. The renovation includes removing an interior wall to open the kitchen to the living room, installing new hardwood floors, new lighting, new cabinets, and new appliances. The cabinets will be constructed from birch in a shaker style with a medium/dark brown stain. Does it make sense to install shaker style, white mouldings (baseboard, windows, etc) as part of the job? We are thinking to use simple ‘cove’ crown mouldings too. We think it makes sense but looking for some input.
