Can I prune now or do I have to wait for Spring?

I have several bay laurels, boxwoods, and gardenias that are looking pretty shaggy. It's been more than a year since any were pruned. I really want to tidy them up (taking off about 10%-25% depending on the plant) but don't want to send them into winter at a disadvantage. I'm in zone 8, the end of the line for bay trees. The boxwoods and gardenias are hardy to zones 6 & 7. What should I do? Thanks!
