Taj Mahal counter back edges hidden under backsplash be SEALED?

Hi. I’m curious. My slide in range is in between two Taj Mahal quartzite counters that backs against a wall with a tile backsplash.

I noticed that the countertop edges parallel to the sides of gas range were polished by fabricator. However, The cut back edges of the counter, the one that touches the wall and gets hidden or goes under the backsplash, this counter’s back edge was just cut not even sealed.

Are these countertops back edges supposed to be sealed? Though they are against the wall and hidden under the backsplash tiles? Or the backsplash tiles that sit on counter back edges enough of a protection especially from oil splatter from stove?
