Northern Sea Oats self seeding EVERYWHERE - when do I cut them back???

I'm in northern Ohio right on Lake Erie - I guess zone 5. I have many grasses and three of them are NSO . I generally cut them back early November but apparently that's way too late to prevent them from seeding into every dang perennial and nearby ornamental grass. So I'm really stupid here - what do the "heads" look like when I should be cutting them off? When they start to turn brown? Unfortunately that's when I think they look prettiest, but I'll do anything to keep them from self-seeding. They are too big and too old for me to dig them out and get rid of them - I don't have the physical strength for that anymore. But please tell me when to cut these back. Many thanks.
