The worst cheese ever for making a sauce...ugh...

I made a cheese sauce to use with chili cheese fries for lunch. Well, let's say I tried to make a cheese sauce. Normally I use grated cheese but since it makes it kind of gritty to use the pre-shredded cheese, I decided to go all out and use a block of Heluva Good colby-jack cheese. I grated it and poured in a bit of milk and began to melt it. The milk would not mix in with the cheese and just stayed separated from each other. I have never had this happen before. After it was all said and done and I was washing the pan out, what I had left was a glob of cheese that resembled a large wad of chewed chewing gum...it was like rubber! Weird. Needless to say, I will never buy Heluva Good cheese again. Have you ever had something like this happen before? So strange. Makes me wonder what they are trying to pass off as cheese!?
