This is from my new Betty Crocker's Lost Recipes. I had company for lunch this week and tried this tetrazzini recipe which is different from the one I usually use --
CHICKEN TETRAZZINI
8 oz. spaghetti
1/4 c.butter
1/4 c. flour
1/2 t. salt
1/4 t. pepper
1 c. chicken broth
1 c. cream
2 T. dry sherry
2 c. cooked chicken (or turkey)
1 jar (4.5 oz.) sliced mushrooms*
1/2 c. grated Parmesan cheese
Chopped parsley
Heat oven to 350. Cook and drain spaghetti as directed on package.
In a 2 quart saucepan, melt butter over low heat. Stir in flour salt and pepper. Cook and stir until mixture is smooth and bubbly, remove from heat. Stir in broth and cream. Heat to boiling, stirring constantly. boil and stir 1 minute.
Stir spaghetti, sherry, chicken and mushrooms into sauce. Spoon into uncreased 2 quart casserole. Sprinkle with cheese. Baked uncovered about 30 minutes or until bubbly in center. Sprinkle with parsley.
*I used an 8 oz. package of fresh mushrooms that I sautéed in butter.
Tetrazzini served with biscuit bites.
