30 inch All Gas Range: Theramador Vs Dacor

Hi, we have been debating this issue for months, and everyone I know has larger ranges so can't comment on performance of the 30 inch versions. We thought long and hard about Wolf, but I'm unimpressed with the small cooking area (3 inches less than Thermador) and the 2-inch stainless steel border around the stove-top (unless anyone can tell me why that's an awesome feature?).

I don't need the dishwasher that comes with the Thermador, so that's not a huge selling point. I want something reliable, that will look nice, and will offer good burner-top and decent oven space. (GE appliances are not in my consideration set)

I've read several other posts but none where people decided on one of these and now, a few years in perhaps, have feedback. @Ruchs, @DeSantis & Domb Interior Designs @ Mary Rubino Interiors -- ?

You might want to consider Bluestar. I don't have one yet (getting one later this summer,) but it is a solidly built cooking machine. No bells and whistle, just old fashioned, solid function. Do check them out and see what people here who own them have to say.

Otherwise I would choose Therm over Dacor.

Thanks - I am looking for something with sealed burners. I had thought Bluestar only had open burners, but I'll look again.

tsur - I think you'd better check you dictionary on the meaning of prosthelytizing . I don't see Dacor's site trying to convert anyone. Their religious leaning section is buried deep in the site in the co. background section. The section is simply a statement about their philosophy, it's not as if their salespeople tote around a bible and ask dealers to come to church with them. Nor are their owner's manuals or sales literature riddled with these messages. Their propaganda section about being "green" is far larger. They were one of the first co.'s with a Star K certified oven, what should we make of that? Maybe muslims should stay clear of this brand too? How about the hindis? Look folks - all they are trying to do is give the public a glimpse about the company from the human perspective. They are not in the commodity appliance business. Don't read too much into that section of the website. The new CEO is an outsider and total quant jock. Also seems he is focused on the bottom line as he's gotten rid of most of experienced people who helped build that co, pretty much just showed them the door. Doesn't seem very "christian" to me, but more cold hard business. So, I don't thnk anyone has to worry about the zealots, if a Dacor appliance fits your needs and pocketbook - you should buy one without fear of being asked to join the congregation.

I can answer the BS oven door question. My 36" BS RCS was installed two days ago (haven't used it yet, hopefully this weekend). During the burn off of the oven (high temp is 450 F for an hour) I checked how hot the oven door got, as that has been a big issue noted on these boards. On my range, the SS part of the oven door did not get hot, just a bit warm. The glass on the oven door got hotter but not that hot. What did get quite hot were the sides/edges of the oven door. I could touch the side but not for long. Definitely quite hot. Not instant burn/scald though. There are vents (or look like vents) right there so it makes sense that those areas heat up a lot. Your kids would have to press their hands up against the 2" side of the door for several seconds for it to affect them negatively. More likely a kid running around will touch the front of the door and that is not a problem, on my range at least.

I wanted to contribute my experience- we got the capital culinarian all gas 48" w/ the griddle (so we have 6 burners) within the past year and I have been using it for a few months. I LOVE LOVE LOVE our decision!! I too did a lot of research and did not read many negative reviews about it- and they are very well built, pretty, and simple design-wise (my husband is a contractor and thought they were most similar to the commercial ranges he has worked on, i.e. if something breaks it would be easy to fix). I probably wouldn't need 6 burners just for cooking- but it is nice to have. I also do a lot of canning/preserving, and do use 6 burners at the same time (simmer for warming lids, canning pot, pot for extra hot water, pot w/ stuff to be canned, pot w/ syrup for the stuff to be canned, one pot w/ dinner cooking). My husband loves the griddle- very easy to make breakfasts, hot sandwiches, etc. You could always do 4 burners and a grill/griddle as an option if you don't can/need 6 burners. Also, I really enjoy the big oven on the 48" (not sure how this compares in size to the 36" since the 48" has a large and small oven and the 36" one large oven). It can fit 9x13" pans side by side, and cookie sheets. The roll out racks aren't as smooth as some of the other brands we looked at (we liked the thermador racks the best- very smooth) but they work pretty well. Also, I haven't had any problems w/ the baking heat/evenness, and our oven is gas (which I think is typically worse than electric ovens?). I haven't baked bread yet- but have done a lot of other foods (cookies, casseroles, etc.). So if it were me I would definitely do the 36" over the 30" :-) It sounds like you would use it w/ all the cooking that you do. If you have any questions about mine please let me know :-)

will you guys help me decide? i'm replacing our freestanding 30" gas range, a cute but disfunctional smeg, and am looking for something that works better but looks somewhat similar: stainless all over, plain jane knobs without too much touch screen electronic interfaces that will die in 5 years, front controls, minimal or no back panel, etc. i'm trying to choose between these two: - electrolux-- has 5 burners, looks cute for the price, and we found a local store that will sell it to us for a bit under $2k. cons are some negative reviews about the workmanship, and a little bit of electronic button nonsense on the front: https://lowes.com/pd/Electrolux-5-Burner-Freestanding-4-6-cu-ft-Self-Cleaning-Convection-Gas-Range-Stainless-Steel-Common-30-in-Actual-29-875-in/50386902 - dacor distinctive-- probably will be a bit over $3100 and only has 4 burners. but no touchscreen crap and maybe the quality is better/ not going to break as readily? https://www.ajmadison.com/cgi-bin/ajmadison/DR30GSNG.html (on aj madison it says discontinued but our local appliance store still has some i think?) i like cooking but i don't necessarily need all the bells and whistles. but what's really important to me is ease and enjoyment of use, and not replacing this thing again in 4 years like with the smeg. have you guys cooked with either of these? do you like them? has service been smooth if you have needed it? You are in no way limiting your cooking area or diminishing performance by having the stainless band and slightly narrower burner grates. The cooking area is determined by the burner. The grates the just a support for the pan. I have a Wolf DF range and would not recommend it for other reasons but I regularly use 14" skillets and a griddle that is 15" across. I have a 36" so the burner grates are around 11" wide. If the pan hangs a little over the burner grate it doesn't matter. Many grates look like these.

You can use pans bigger than these grates. Also look at the back as some ranges have something sticking up immediately behind the grate. This can be more limiting.

The important thing is to have pans that conduct heat well.

Factors that affect performance would be

BTUs -high heat, for stirfry and rapid heating low end for simmer

burner cap- this influences the way heat is delivered to the bottom of the pan. Something like a BlueStar (bottom) keeps the heat to the middle of the pan on big pans or distributes the heat more evenly if the pans are sized to the burner. The capped burner, top, depending on how it is engineered can have a lot of flare on high heat.

Notice the Thermador, right is capped and seems to have quite a bit of flare BS on the left

Also look at the shape, the BS star shape is good for cast iron, which does not transfer heat well compared to aluminum or copper

The Wolf is a dual stacked burner so less flare than some. Some feel there is a cold spot with a capped burner but if you have heat conductive cookware, the heat will be even.

The control of the knob also affects performance.
