The best way to get help on this forum is to do a thumbnail sketch of the existing floor plan also showing adjacent rooms. Indicate overall dimensions of each area/room. The go around the perimeter of the room indicating every measurement: Start in corner, > corner to window > window > window to wall to corner > corner to door > door > etc. You get the idea. I would be happy to draw up a scaled floor plan. One thing to remember is that there is no such thing as a cheap kitchen renovation. It's probably the most expensive reno in a home. The way to save $$ is to have a minimum of custom and drawers, stick with simple hardware and faucets and lighting. Spend the $$ on countertops and backsplash. Appliances are very personal as to how you like to cook, so you are your worst enemy! Let's see those floor plans.

Honestly, even without context, what you have looks very nice. I don't know why you would change it. I just changed mine to metal balusters, but what I had was builder grade junk from 1995. What you have was nice when built and is still nice. The balusters aren't plain, but they're not busy either. No need to jump on the metal baluster trend. Also, you will find if you get a quote that stair work is pretty expensive. So if there isn't a pressing need, spend your money elsewhere.

I would organize. Choose the most attractive bottles, put them in some nice array on the shelf above the sink, the rest can go in the cupboard. You could consider getting a collection of old crystal bottles for your spirits. Either take the sink out or clean it up so it looks like you might use it. The shelf above dedicate to organized glasses. Why are the shelves all cut out like that? I might look for some glass to put on each C so you have a full shelf. There appears to be one super high C can you get a piece of shelving to again fill it in, it appeas there was some sort of a bracket on each side. What's that about?

I agree and honestly I cannot imagine a sencond storey addition costing only 100K but I aslo have no idea what the costs are in Aus. You need 5 bedrooms? I guess I would be looking at expanding into the space the garag is taking. Have you even found out if your roof and structure will handle a 2nd storey .
