You can dig them anytime you want too. But they are best after frost, when the stalks are dead. Some say they cause gas, so you may want to pick up some bean-o. You can eat them raw like water chestnuts, WC are a pain to grow without a pond. You can eat JA anyway you eat white potato. Well maybe not as a "Leadbellie". Leadbellie/ Leadbelly: A large bake potato cut in half long ways, but do not cut though the bottom skin, so it opens like a hotdog bun. Then full the potato with any & all the topping you love. But every other way is fine for JA.

In years past I grew Reigers as houseplants; I remember them having shiny leaves. These look much like the leaves of the ones I planted as tubers, just a shape difference. Leaves are a bit hairy. IÂve been letting these dry out, I hope that is the right approach. They have stopped blooming now, still have leaves; though the biggest ones at the bottom have all dropped off, and some minor branches have dropped off. I donÂt know if they have tubers, IÂm afraid to try digging them up too soon. The ones I planted mayself as tubers have now had the stems drop off completely, so I guess that means I can dig them and see if there is a tuber left under there.

well you wait for the first hard frost, that turns the plants into looking like cooked spinach (as another member aptly described it). take some heavy duty cutters and cut them so the stalks are only about 6"above the ground. Some people like to cover the tops of the stalks with aluminum foil to keep moisture from going down the hollow in the center of the stalk and rotting the tuber. This is because you will then let them sit in the garden for a few days, up to a week I think. This time forces the goodies to go down into the tuber and 'feed' it as it were. Then you dig them up gently with a pitchfork. Kind of go around them with the fork, about a foot from the stalks in either direction so your radius is a couple feet wide. It may seem like alot until you see the size of tuber masses on some dahlias. Gently pry them up from the soil and set aside. If you have more than one type you may need to keep track somehow of which is which. If they are really muddy, hose them off. Let dry a bit. Then comes the experts on dividing tubers. Must find link. I think it is Jroot who posted the definitive work on separating tubers. As for storage, there are many options. It really depends on your climate and what you have to store them in and its relative dampness. Some places and methods will cause them to shrivel and dry up while others will turn them to rotten mush. I will let others take over from here.

Now is the time. If you buried them in a spot w/ good drainage they should look like the day you put them in the ground. If you have bottom heat & lights you can start them indoors and gain a year's growth; or you can plant them in a sheltered well drained place w/ just 1 node above ground and they should be rooted by late July. I just dug up my potted figs yesterday and they look like they came through the L.I. winter just fine.
