Pruning advice please

So I ventured out today to prune the apples trees for the first time. I'm a little late - rain, rain and more rain had delayed me, but still I was surprised to see buds swelling already. The quince even has a few blossoms starting to open -- early this year!

I've done my research and knew to prune off crossing, inward growing, and water sprouts. Still, I didn't feel sure of myself. This is the first year I am pruning since the deer have devastated the trees in the past -- this past year I've managed to keep them away so they've put on a lot of growth. (I have 5 dwarf apples in ground, and several more dwarf, semi and standard in pots and barrels.)

Here's my question -- I have 2 trees that have what may be water sprouts that are well developed enough that I am just not sure -- I would like your opinion on which (if any) to remove. Here is the first tree, pics taken from front (branch in question is on the right)and back (it is on the left):

This second tree has 2 branches that I question, but it also seems to be double trunked. What should I do with it? These pics might be harder to see what I mean -- I took the best shots I could:

The first tree, I'd take out the vigorous verical branch (on right then left), all the way back to the main trunk leaving no stub.

For the second tree, I have to wonder if one trunk is the desired variety, and the other trunk might either be the desired variety or might also be the rootstock sending up a giant "sucker". My guess is that both are what you want, but the tree was simply planted too deep with the graft union underground, in which case you can just take one of the two out, your choice, or even leave them both, however then you will run into issues a year or two down the road when the trees are bigger and they are constantly bumping into one another. Anyway... not knowing at this point whether one tree is the kind you want while the other might not be, it *might* be best to let both of them fruit before making your final decision. Just leave them for another year or two. If they already fruited last year, then you'll already have this answer and can eliminate one as needed.

Thank you, David! After reading your response, I went out and remove the mesh to take a good look. I think it may be the rootstock that continued to grow but not sure -- took a few more pictures for you. It is just the way that the 2nd trunk originates that makes me think so. I can't remember what the tree looked like (if it had that 2nd trunk starting) when I planted it several years ago -- it has not blossomed to date. Here are the pics:

This tree LOVES to grow. The gritty mix seems to make my plants very happy. I propagated the cuttings acquired from this tree's pruning in early March, and now have about 20 new Dawn Redwood trees. I have some planted in a forest style, and will probably field grow about half of the rooted cuttings for trunk fattening. They grow so fast. I love this game! I wish I would have discovered my passion for bonsai years ago. Even after dedicating over a year to attentive research, there is not much that can compare to the skills only acquired through experience. I have to learn the hard way sometimes, but if this hobby (obsession) was based on a scholactic scale, I think I've earned myself an even 'B' so far. Anyway, I figured I would keep anyone interested updated......(moochinka). This picture is probably almost 2 weeks old, too, so I'll try to post a more recent one later with a time frame for reference of how much my plants are growing. A big 'shout out' to Al and his enlightening posts that have helped me understand the Plant Kingdom a little better, as I am alone in my interest where I live, and can only learn through you all. I got rid of my dewdrops, too. Messy, huge, and very few blooms. I think that they need to be hacked down to about a foot every year and then they will bloom nicely. Who needs the work when there are other great blues out there. If you do have a standard and want to maintain it, I have found that you need to stay on top of the thing by basically thumbing off the new and tender green shoots as they develop. That's the easiest way rather then waiting til you have to saw off multi trunks to get it back to the single trunk. Cassia is another one that is a lot of work to maintain as a standard.

Pruning very old culinary sage plants

Not knowing what zone you're in, my experience might not be comparable. I have one culinary sage that is 5 or 6 yrs old. It's generally about 2 foot tall, very shrub-like, and it's lower branches are pretty woody. It's outdoors in the ground year around. In the Spring the leaves will sometimes be shrivelled depending on how hard a winter, sometimes they're fine if the winter was relatively mild. Either way, I have pruned it back hard the last couple of years, leaving nothing but woody stubs and the plant at about one-half to two-thirds its original height. To my amazement it has come back fine in each case. However, I was just about to shovel prune it the first year I did a drastic pruning and found that it sprouted new growth rather late in the spring, so it got spared.

Need Peach Tree Pruning Advice Please!

I will only tell you what we did with ours, here in Oklahoma. First of all the tree was overgrown... too tall for my liking since we have a very small back yard. I had read a book by Ann Ralph, "Grow a Little Fruit Tree". You can Google it if interested. She and several other Nursery people advocate summer pruning to control height. The idea is that if pruned at the summer solstice, about June 21, the tree has used up most of it's winter stores for strong growth. June is the time to prune for height and winter prune to take out all growth that is crowding the center. We now have a four year old peach that is 6' tall and loaded with fruit. It has 4 scaffold limbs that are maxed out at about knee height. If I were doing this again with a younger/smaller (5/8 caliper) tree I would take it down even lower so we could have more fruiting wood within that 6' to 7' height. Another thing to look at would be videos made by Dave Wilson Nursery on this subject. Google "backyard fruit". Hope this will give you some ideas to think about.

Looks like both are growing above the graft...cut the one going sideways.

The graft union is the large bulge right at the surface of the ground. Therefore both "trees" are the desired variety, and you can and should remove the one growing out more sideways as previously discussed by Konrad and myself.

Thanks to you both! I will be posting again for some hand holding as I try grafting some of the prunings onto two dwarf rootstock that I have. It is pouring rain again so I will wait until I can take pics -- hope you will help me then too.
