New Venetian Gold vs St. Ceclia vs?

Trying to decide what granite to get for our kitchen and bathroom countertops. Ideally we would like something that is available precut in the event we need a single 3 or 6 ft segment to finish one of the bathrooms and not have to buy an entire slab to complete. I have enclosed photos of the kitchen cabinetry (a light cinnamon) and the wood flooring (natural hickory). The bathrooms will have a polar white cabinetry and we're planning on going with porcelain stone-look matte tile that is white with a shade of a light beige. Here are pictures of the kitchen cabinets and flooring.



Any thoughts or recommendations would be helpful. We definitely intend on picking the slab, but as I said before, precut needs to be a consideration in the event we need a small chunk to finish the project. Thanks all.
