Just baked yellow cake in rectangle pan. From a box. Directions said to bake 27 to 35 minutes. I baked 31 or 32 minutes. Edges were brown. Put that cake tester stick in the middle--came out clean. The recipe I am using said to use a fork to poke cake all over with fork. Then you put hot pineapple mixture on top. When using the fork, I started to pull up bits of cake. Do you think that was because cake was under cooked or just hot? I am worried about under cooked cake now and it's not like I can taste it. Thank you for any input.

If it browned and the tester came out clean, it's not under baked. I think you might have better luck with a toothpick. My guess is it was the heat, and the fork was too big.

Besides, under baked cake is the best. I usually bake my cakes to where there are a few moist crumbs on the tester. I've found the cake is much moister that way. I think your cake will be fine!

Probably just because it was hot. I have a recipe you poke with a straw and little bits of cake always stick to the straw.

Hi kabergs, Also, there's the NordicWare pan that makes small cakes shaped like individual 3-D cars There's a pickup truck that can easily be decorated as a tow truck, a race car, a doc hudson-esque car, etc. You could do a round cake topped with the correct character. There are a few of these pans on Ebay right now. WIlliams-Sonoma was selling them around Christmas. Good luck! Nina

Oh, yes! The recipe for those who missed it. Pineapple Coconut Self Frosting Cake 1 8.75-oz can crushed pineapple in syrup 1/3 cup shortening 1/2 cup sugar 1 teaspoon vanilla 1 egg 1 1/4 cup all purpose flour 1 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup flaked coconut 1/3 cup brown sugar 1/3 cup pecans 3 tablespoon margarine or butter (melted) Thoroughly drain pineapple, reserving 1/2 cup of the syrup. Beat together shortening, sugar and vanilla. When creamy, beat in egg. Sift together flour, baking powder and salt; add to creamed mixture alternately with reserved syrup, beating after each addition. Spread 1/2 of batter in greased and floured 8" round or square cake pan. Try to evenly layer with crushed pineapple. Cover with remaining batter. In small bowl, combine coconut, brown sugar, pecans, and butter. Try to sprinkle evenly over batter. Bake at 350Â° for 35 to 40 minutes.

Lemon/angel food cake question

Yesterday, I went grocery shopping and purchased items to make this cake. I am eager to make one but not until all the chocolate macaroons have all consumed... LOL... I am planning to use my own filling with Meyer lemon juice. It's the only lemon/lime I can consume without upsetting my stomach. Plus, I can adjust the sweetness to my desire taste. As for the cake rising and then collapsing, I'm wondering if that is due to sudden change in temperature. Do you think it would help to minimize the collapse if I allow the cake to cool down slowly? I am planning to just leave the cake in the oven for awhile after turning off the oven? Perhaps after a few minutes later, leaving the door cracked open will allow the heat to go down slowly. The cake may still collapse but not as much. Do you think this would work? Also, I'm wondering if this cake would freeze well.

I just wanted to tell everyone that I made the frosting this afternoon, and it turned out very well. I made three layers, but I split two of them and frosted between them, and that made it high enough to fit in my friend's cake carrier--couldn't use the third layer. I found it really hard to frost without getting red crumbs everywhere! LOL I decorated it with a fresh red rose and three white flowers (lillies maybe) that were in the bouquet I bought at Aldi. I put the green rose leaves all around the bottom of the cake. I did this mainly to make it look neater, but it turned out quite nice. Yes, I used granulated sugar. I'd heard absolutely not to use confectioner's and followed the recipe exactly. The only thing I did was to double the frosting recipe, and I'm glad I did. I had just a dab left and covered the third layer with it, and let DH try it. He thought it was really good, so hopefully my friend likes it. Thanks for all your help, ladies!!

Doubt under cooked after 31 minutes. Probably because its a ....metal fork. I'd continue and do as instructions say. What size pan was it...9×13??? If so it would surely be done. Only way I see it not being done was if you used a super tiny but very thick pan.

Hot pineapple mixture over cake...sounds delicious.

It's because the cake was still too warm...I suppose it's done by now, but for future reference.

I've made poke cakes before with simple jello pudding mix....they're quite delicious...
