Wood floor between living room and dining room

I have existing hardwood floor currently in Living room. Would like to update the dining room floor which has old wall to wall carpet and continue the hardwood floors. I have 2 issues. The dining room floor is not exactly level but we can probably fix that somewhat. Right now there is a wood saddle at the end of the dining room that butts up to the Living room. I would like to remove that and then continue the new wood flooring into dining room. One contractor said I have to leave that saddle between the 2 rooms but prefer not too.

DR is not completely open but has wall on right and left side about 3 feet wide as you enter the separates from LR.

Any suggestions as to how to deal with that wood saddle if I truly can not run the hardwood floor straight through one room into another?
