I'm too tired to figure out oven timing for lamb shoulder

I'm making a recipe, Thursday, for slow cooked, bone-in lamb shoulder that's pulled in the end, like pulled pork. It calls for 5.5 lb. at 275° F for 4-5 hrs. My lamb shoulder is 7.5 lbs, but also includes the end, which is probably bonier. I haven't done this before, and I'm having trouble figuring out if I need more time. This is the kind of thing that's better over than under, and if it's done early, I can just let it rest longer. I need dinner to be on time, however.

My gut says just go for the full five hours. My brain says, "Zzzzzz...Uh. Wha?"
