You won't be able to keep spritz fresh for 3 months without a freezer. They will get rancid. Best to give them away.

I agree. Good spritz are delicate and crisp, and will also get soggy if there's any appreciable humidity.

I did once have one of those giant tins of Danish butter cookies at work which would not go bad. They were hard, though, rather than crisp. I got so tired of serving them! They didn't get soft or rancid or anything.

Is there a way to vacuum seal spritz without breaking them? Maybe in jars? That might help...

But those tins of Danish butter cookies are full of preservatives....I presume your home made are not.
And vacuum sealing won't protect butter cookies from becoming rancid.

No "preservatives" per se in butter cookies.

I have made and used invert sugar at home, but not for cookies. I would have no qualms doing it again. Nutritionally, it's just sugar. I don't use coconut products (allergic) and haven't tried baking ammonia, though we had a thread or two recently about it. King Arthur sells it.

Exposure to air hastens oxidation and rancidity. It makes sense that vacuum sealing will slow it. I believe you that it doesn't if you've tried it. Perhaps you have to leave enough air inside the cookies that it doesn't make a difference?

Do a search on Amazon (may be Walmart?). You are looking for those little packets of oxygen absorber. I don't remember exactly what you call them.

Put them in you cookie jar or plastic bag. Your cookies will stay fresh for a very long time..

Any Christmas cookies left over I take to my hairdresser shop. They are all big sweet eaters at the shop. I also take them a tray before Christmas.

Yes, many are silica for moisture, but some are to remove oxygen. Also, some do both.

Or you could go with zip loc mylar bags + the absorbers, like these:

(The absorbers are included with the bags in some of the product selections.)

If you're going to store them in the garage, I would suggest using tins (like those big popcorn tins) to stash the bags of the cookies in to prevent any rodents from snacking.

What if you give them as gifts? A friend of mine gave everyone a tin of cookies at our dog park group. I found it very thoughtful of him and we have really enjoyed these cookies. So anyone that's not a close friend, that would be a nice Christmas gift. Anyone asking for baked cookies at a dog rescue near you? This time of year, they are doing that where we live. The proceeded go to help the dogs and they always need plenty of cookies.

I do what party music does: layers of waxed paper in tins. I put an extra layer over the top, extending beyond the rim to make the seal tighter.

I make butter spritz every year & they keep for weeks, even in our humid FL weather. No way for 3 months, though. Is there nobody to gift w/ the excess?

I have already gifted every one I care to give them to. Next step would be to walk down the street knocking on doors (which I have done before). But I have not had a good reception with such sharing before so I am not inclined to do it again. Spritz are so much work that I don’t want to throw them away on the unappreciative. I have written on the recipe card to make 2 fewer batches next year.

Tins I have plenty of. I buy them as I see them in resale shops during the year, as no one ever returns them. At least for now I will pack up what I have. One advantage to that is if I have to go out to the garage to eat cookies, it might slow me down. ;) I’m thinking about bagging a stack of 5 cookies then putting them in the tins, so I can go get "one serving" at a time. .

Keep them in a cooler. Its cold outside, so you have free ice. If it warms up, add ice or buy dry ice. As you make room in the fridge/freezer, move them inside. Gift away anything you dont think you’ll consume in a reasonable amount of time.

All our snow is gone with warmer day temps. The problem is the fats. They will turn a bit rancid quickly.

The food saver packets, the iron ones, will buy some time. They work similar to the hand warmers. They suck up the oxygen quickly, but stop working if the container is opened and closed often. (they will harden). Most effective for long term storage undisturbed.

I would re-assess your freezer and find small pockets of space for a dozen here and there. You will have some for 4th of July.

Next year try dipping some in a bit of chocolate. May not have an issue sending some home with your guests/family.
