Overwintering Sweet Potato Vines in ONLY water

So I've been doing some research on overwintering sweet potato vines and came across lots of information on how to overwinter them, but none of these guides addresses whether they'll be fine in water during the entire overwintering process.

I had a successfully modest first harvest this year of two varieties: Okinawan and Murasaki. I'm currently in the curing process right now, but I have vines I took from before harvest rooting in some clear plastic peanut butter jars. They've already started developing roots. My question is, is this all these vines will need for the winter months? Or do I have to plant them in soil for them to survive that long? Basically, is water all they really need? Some of the leaves are already starting to turn a bit yellow which worries me. How much light should I be giving them during winter as well?

A lot of questions, but I appreciate the help!
