Will “dead” mint grow back from roots?

Hi all! I know it sounds straightforward, but will a “dead” peppermint plant grow back in the springtime? I would think not, but my mom thinks if we keep watering the pot, then it will come back in spring.

The peppermint was in a 1gal container. It has been reduced to dried twigs. Shocking since mint is supposed to be an unkillable plant. Her other mint (regular variety) that was in a 5gal container has all died, except for one straggly plant with roots. I’ve been watering the mint diligently; it seems to do better in partial shade.

I took a look look at the peppermint’s roots- they seem pretty dead to me. No signs of white or yellow; no large roots, just threadlike and dried out.

Will the peppermint grow back? It was my mom’s favorite and she’s pretty bummed it’s gone, but hopeful it’ll make a comeback this spring if we keep watering. Is this a lost cause or proof of mint’s hardiness?
