Which tile?

My kitchen is in the final stages of its renovation and I'm trying to decide which backsplash tile (and electrical switch&outlet covers) to use. The backsplash is ~23 sq ft between counter and upper cabinets. The cabinets are shaker style painted blue and white (colors below). The counter will be walnut butcher block along the wall (and Carrara-like quartz on the island where there is a farmhouse copper sink). The faucet, hardware, and schoolhouse pendants are in brushed nickel. Appliances are stainless steel. We don't have immediate plans to sell but may do so in 2-5years. The house is an 1890s cottage with a 2001 addition.

My questions are:

white or blue tile backsplash?

nickle, porcelain, or plastic screwless electric outlet and light switch colors?
