What's wrong with this homemade spaghetti sauce?

I grow my own tomatoes, and I can the juice from them (remove skins, then crush in a food processor until very liquid). I don't normally make spaghetti sauce from my own tomatoes, but decided it was high time I really do this. So I took some of my fresh tomatoes, ran them through my juicer (centrifugal), also took two jars of my canned, crushed juice (2 yrs old), strained, and mixed together in a big pot.

So I cooked this on the stove top w/o a lid until it thickened, added salt, sugar, spices / herbs, then tasted. WOW!!! The taste is SO intense! And not from what I added, but the tomatoes taste so tart and intense! I added more sugar, and diluted a bit, but still intense. I opened a jar of spaghetti sauce from the store, and this sauce is very pleasant, mild but flavorful. What's the difference?

My sauce is now thinner than the stuff from the store. I was able to rescue it by adding ground beef, the grease, heavy cream, and parmesan. But why was it so intense, even after thinning it?
