Jerusalem artichoke - Helianthus tuberosus

I had tossed a few of the grocery store tubers in the edge of a veggie bed last year for fun and try them out. But I guess when you tell the DW that a new food is also called “fartichoke” ….. The chances of her wanting to actually try it out goes way down. I’ll have to remember that.

None the less, the few tubers turned into a giant mass of tubers and huge cluster of plants by the end of the year. At the end of the year I pulled as many as I could out… but these few remained which had fallen outside of the raised bed. I hacked half of them back to keep them from blocking the plants below. Despite the risk of these taking over a bed in no time… they are such an impressive plant. The top of the fence is 7ft tall… so these are pushing 12 feet tall.
