Jesdip, Tomatoes are good, but this year they are thick skinned. So I cut the skin away and make them into squares.
plllog, in that first dish, the greens are my home grown malabar spinach. The twigs are tender new shoots, and the leaves are both sauteed, and raw for salad with the tomatoes.
They're gorgeous, DC! I love the square ones. I bought a 1/2 bushel of romas the other day, first time in a few years. Previous years' crops didn't look great. I'm going to make some sauces, Ina's Roasted Tomato Soup, and I'm really hoping they'll freeze, once I blanch and peel them. Has anyone frozen tomatoes?
Yummy! I don't usually care for squared off produce, but I do like the tomato cubes. They look inviting and make the caprese salad look interesting. Love the purple basil with the yellow and crimson tomatoes too, and the tricolor slices. The herb twigs in the first one look hard to eat. Can I order delivery?
Jasdip, we freeze Romas all the time, in plastic bags. No peeling or cooking beforehand. When you take out as many as you want from the freezer, run under hot water and skin slips right off. Great for chili or anything cooked.

Carol, I was going to say the same thing, the bi-color looks like Hillbilly or Big Rainbow, both of which I like a lot. I do have tomatoes, but they are just starting and the heirlooms are really about 2 weeks away, I'm getting only an occasional one, like these. They are Great White, Solar Flare and Black Vernissage.
