Got lots of zucchini? Try this recipe.

I made this today and thought it was great. Can't wait to make it for my daughter-in-law. We love Asian food.

I made some changes (of course I did): Instead of slicing the zucchini into rounds I cut it in half crosswise and then sliced the halves lengthwise into piece about 1/4-inch thick and 4 or 5 inches long. I skipped the salting/sitting/softening step. And I confess my flour had some Italian herbs in it because I'd started to make another recipe and didn't want to waste the flour. I hadn't added all the herbs, so there wasn't a lot. I assume it must have added something to the flavor, but I didn't notice.

I didn't change a thing about the sauce though. So good and so easy--just one part rice vinegar to two parts tamari soy sauce. Excellent on the zucchini.
