Dilute vinegar for fridge pickling?

Please note this question is about *refrigerator* pickling, NOT about canning.

I
have a recipe for pickled beets that's very good, except for the vinegar taste getting progressively stronger the longer it's been in the fridge.

I'd
like to cut the vinegar with some water, but am not sure if that will
lower the acidity so they will spoil before them all being eaten.

Thoughts?
