Can I freeze cauliflower fried rice?

Making a version of cauliflower fried rice that includes sautéed onions in olive oil, river cauliflower, shredded carrots, peas and scallions. If I make a large batch would this be ok to freeze, and then when needed thaw and reheat the portion I want to use? If not frozen, how long would it last refrigerated? Thank you

If you have a good freezer, rather than one that shares its works with the fridge, and you have an empty spot where it's coldest, it should freeze fine. The issue with freezing vegetables and the fried rice as well, is water migration. The faster they freeze, the better the outcome.

Chill it in the fridge first. Then potion it into amounts you think you'll want to use and put it in freezer zipper bags. Press out all the air, or even better use a soda straw to suck out the air, being careful not to suck up the rice, etc. Flatten the bags as much as possible and lay them out in the freezer. Once they're frozen you can stand them up, and even put them in a little box or something.

How long it will last in the fridge depends on a lot of factors including the fridge.. In an airtight bag or container, perhaps as long as a week if you have a fancy fridge with very stable temperatures. Normally, maybe just a day or two. If you keep more than a couple of days, make sure to reheat really thoroughly. If it starts looking slimy or sad, throw it out.

Unless there is some meat in it...it should keep easily 4 to 5 days in the refrig....the veggies will get a bit soft and no longer be crisp tender...but it will still be good.

Or simply parcel out into containers or freezer bags and freeze. I don't see much point in worrying about stuff like chilling first, unless you have several quarts of the stuff. Just put it into freezer bags and freeze. Of course you know the basic stuff like pressing the air out of the bags and using freezer bags.
As for the freezer sharing with a refrigerator? Unless you have one of those old things with the separate ice cube trays in the freezing compartment, it should be fine for a couple of months. Today's refrigerator/freezers are way more sophisticated than they were 40 years ago.
But know that no matter how you freeze, it will then be frozen vegetables....not crisp tender like when first cooked....but still good and well worth saving.
Don't make easy stuff hard....just put into a freezer bag and freeze it.

If it wasnÂt for this forum and all of you with the experience and knowledge and willingness to share Â I would never volunteer for these jobs! :-) Thanks Terri Â I will follow your advice and like you said Â they are good cold too Â so whatÂs the worse that can happen? I was thrilled to Google "Fried Rice for 50" and actually find a recipe for that exact amount! And, even though traditional "fried" rice is not baked Â how else could a normal kitchen pull it off for 50 or more? If it comes out decent Â I will for sure save the recipe for future events. My daughter is a freshman and this is just the first of 4 years of fund raisers and band & drum line competitions. And I have another one just 5 years younger that will likely follow in her sisterÂs foot stepsÂ :-) Thanks! Jeri

I find it a little dry if reheated in the microwave. When I've frozen it before, I like it better reheated in a little oil in a frying pan or even chicken broth instead of oil. Otherwise, it freezes beautifully.

Here's one that I've made and liked. The orange juice adds something to it! Asian Fried Rice (Bonnie Stern) This is best made with day old rice so next time you are cooking rice for dinner - make lots to have lots leftover. Types of rice to use for this are basmati, jasmine or fragrant rice. Makes 4 servings 4 eggs Â½ tsp salt Â¼ tsp pepper 2 Tbsp rice vinegar 2 Tbsp orange juice 2 Tbsp soy sauce 1 tsp Asian sesame oil 1 Tbsp vegetable oil 1 clove garlic, finely chopped 1 small onion 1 Tbsp chopped fresh ginger root 1 sweet red pepper, diced 1 cup frozen peas 6 cups cold cooked rice 3 green onions, thinly sliced on the diagonal Â¼ cup chopped fresh coriander or basil In a small mixing bowl, beat eggs with salt and pepper. Reserve. For the sauce, in another bowl or measuring cup combine rice vinegar with orange juice, soy sauce and sesame oil. Reserve. Heat oil in a wok or large non-stick skillet. Add garlic, onions and ginger. Cook, stirring constantly, a minute or two until onion is tender and lightly browned. Add red pepper and cook 2 minutes longer. Add peas and rice, breaking rice up with a wooden spoon. Stir sauce into rice and combine well. Make a hole in the rice in the centre, all the way down to the pan. Add eggs allowing some to set on the bottom so that some of the eggs scramble and some of the eggs coat the rice. Combine everything. Stir in green onions and coriander, and cook a minute longer.

I think that refers to Toasted Sesame oil. When I was searching for a healthier oil to use in cooking, I researched it and have used refined sesame oil with good luck for cooking. It's supposed to be a healthy, beneficial oil. From the Whole Foods Cooking Oils section on their website: Sesame Oil: The seed of the sesame plant provides sesame oil, which has a high antioxidant content. Unrefined sesame oil is great as a key flavor component in sauces or dressings. Use refined sesame oil for high heat applications like frying and toasted sesame oil for stir fries and Asian sauces and dips. ETA: That recipe looks great by the way!

I agree with plllog.

It's best to cool the food first before freezing. Hot food in a freezer accelerates freezer burn. Getting all the air out from the bag will also help to minimize freezer burn.

Besides, you don't want hot food to heat up other frozen items in your freezer.
