Can I freeze rice pudding?

I have a delicious recipe for rice pudding that I make in my crock pot. Not everyone likes it here in my home but it is a good alternative for breakfast. Is it safe to freeze it? I would like to do this then microwave individual servings? Has anyone tried this? TIA :~))

I have never tried it but my suggestion would be to just do it an see. It is my understanding that sometimes custard type things do not freeze very well but since it would serve your purpose to do it, I'd just give it a try and see.........

Share the recipe.......I love rice pudding....My Mother is in a nursing center now but she made killer rice pudding.

Peppi, this is exactly as written in the book. Gus's Creamy Rice Pudding 1 quart, less 1/4 cup, homogenized milk 1/2 cup granulated sugar 1/4 teaspoon salt 1/2 cup uncooked rice (do not wash) 2 egg yolks (or 1 whole egg) combined with 1/4 cup cool milk, stirred well 1/2 to 1 teaspoon vanilla A little cinnamon for top (optional) Combine milk, sugar, salt, and uncooked rice. Stir well and bring to a boil. Now lower heat and let simmer (not boil) gently for 1 hour, stirring several times. After 1 hour, remove from stove, Add about 1/2 cup of hot mixture a little at a time, to the beaten yolks and cool milk. Then pour the yolk mixture into the pot of rice, and stir continuously for about 1 minute. Add vanilla, stirring well. Pour at once into medium-size bowl (about 7-inch size) and let remain on cake rack until cool enough to serve, or it may be refrigerated after it is cool and served cold. Top may be sprinkled lightly with cinnamon. 1/4 cup raisins, simmered about 2 minutes, and dried in a towel, may be folded into pudding before serving. The recipe also says - Very delicious, quickly prepared. I don't know about that 'quickly' part. lol Gloria

I have been freezing rice for years. I always make a pot full (electric rice cooker) and then bag it in individual servings in zip lock plastic bags. Make sure you don't overcook it ~ you don't want melted plastic in your rice. I usually cook if about one minute. take it out and squish it around a little to redistribute the cold and warm rice and put it back in microwave for another 30 to 40 seconds. There is always rice available, esp. if my DD wants to cook something for herself. Remember,I live in Hawaii and my DH is Hawaiian, Chinese so we eat a lot of rice. make sure you get the extra air out before closing & freezing it because that keeps the bag from filling with air when nuking and bursting open.

Thanks, Kathy! Yep, that's the recipe we use, we always have to remember to flip to the English section, not the Danish, because in typical 2nd generation mode, my Danish is limited to "vi taller ikke om det" and "pas paa" and such table reprimands lol! One year my cousin and his wife offered to dish up the risalamande. The almond was discovered as expected, then another, then another...everyone got an almond! Cuz and co. played a good trick that year; fortunately, they had also brought goofy little gifts for all, too. Now part of family lore :) It may be the almond extract that just doesn't go over so well. I suggested we cut it in half, or leave it out altogether. Blasphemy! I still want to try the Cook's recipe in bethpen's link with orange zest.

Freezing Cauliflower Rice?

Haven't frozen it myself but was thinking the same^. This is info from a quick check... There is no need to blanch cauliflower rice before freezing it. Simply divide freshly-made cauliflower rice into meal-size portions, and put each portion in a freezer-safe bag. Squeeze out as much air as possible, and seal. Keeping the air out of the freezer bags helps ensure your cauliflower rice stays good in the freezer for as long as possible. Flatten and label the bags, and stack in the freezer. Cauliflower rice will keep in the freezer for several months. To use frozen cauliflower rice, let it defrost first in the fridge, or cook immediately on a frying pan.

Here is my favorite rice pudding recipe. I'll just have to try freezing a little to see if it works. It will be in the next few weeks but I'll post it here to let you know how it turned out. I always make extra rice when I cook rice for dinner either to make the rice pudding the next day or to make a stirfry with it in another meal during that week. One less step for another day. Enjoy the recipe!

Old-fashioned Rice Pudding (crockpot)
2 1/2 cups cooked rice
2/3 cup sugar
1 can (13 ounces) evaporated milk
3 eggs, beaten
2 teaspoons vanilla extract
2 tablespoons soft butter
1 cup raisins (optional)
1 tablespoon cinnamon (optional)

1. Put rice and remaining ingredients into a bowl; mix thoroughly.
2. Pour mixture into a buttered electric cooker.
3. Cover and cook on High 1 to 2 hours; stir several times during first 30 minutes.

That sounds great. I love rice pudding but have always baked it and it's too hot to turn on the oven. I'll give this a try. Thanks

I love rice pudding too and my picky kids won't touch it!??? So I did try freezing it...once....it was pretty gross....very mushy and the texture was really wierd afterwards...the flavor was the same but it was watery and the rice was grainy and mushy. Maybe freezing it BEFORE it's cooked would work...just have to be sure it gets cold quickly for food safety reasons....and then just defrost overnight in the fridge and cook as usual the next day.

For the heads up on freezing the rice pudding. I just came back from tag saling and got for $2.00 the little crockette! My kids also turn up their noses at rice pudding thats why I wanted to freeze it. I'll try to cut the recipe in half and use the little crockette instead!

~~I've decided to freeze the rice plain after cooking in measured portions for the rice pudding and for meals. Now I'll make 2 lg. pots of rice, 1 white, 1 brown at the same time. And freeze when cooled. This has helped me in cutting done the prep time before starting the rice pudding in the crockpot. I sometimes cook the rice pudding on low for 4 to 5 hrs. instead of High.
