Comments (14)I don't like kidney beans, so hubby makes regular chili for himself and this Texas Chili for me. It's very hot and spicy, so I eat it over rice with a dollop of sour cream or yogurt on top. True” Texas Chili 1 cup chopped onions 2 garlic cloves minced 2 tablespoons vegetable oil 2 pounds beef round cut into ½ inch cubes** 1 ½ teaspoons salt 1 tablespoon granulated sugar 1 ½ teaspoons freshly ground black pepper 1 ½ teaspoons ground dried oregano (Mexican oregano if it’s available) 1 tablespoon ground cumin 5 tablespoons chili powder 1 ½ teaspoons red jalapeno powder (1/2 to 1 finely chopped jalapeno pepper also works) 1 15 ounce can of tomato sauce 1 tablespoon corn meal in a large skillet or Dutch oven, sauté the onions and garlic in the oil until soft. Add the beef and cook until browned. Add the salt, sugar, pepper, oregano, cumin and chili powder, jalapeno or jalapeno powder, tomato sauce and 1 ½ cups of water. Stir well and bring to a boil. Reduce heat to a low simmering boil and cook, partially covered 1 hour. Remove from heat. To thicken the chili add the cornmeal and stir well to combine. Return to low heat and cook, stirring occasionally for 5 to 10 minutes. Serve with baked beans, over rice (recommended) or with Texas garlic toast on the side. Add sour cream if desired. ** 2 ½ pounds of good quality ground beef can be substituted for the beef round if desired. Comments (8)Thank you all for the well wishes.....Nates grandma, Gracie is adorable We had a lovely dinner at my daughter's. We were going to have a family celebration but my SIL died unexpectedly a week and a half ago. DD was out of town, so my son flew in from California and drove me to North Carolina for the funeral and my other son drove here from Pennsylvania to stay with DH. It would have been silly for them to return a week later. 9 years agoMy little turds: brothers named Fafner (gray) and Fasolt (black). We got them last fall, when they were just 8 weeks old, from a rescue organization nearby. Fasolt is so black that he's impossible to photograph, but I chose this photo because you can see how much they love each other. :)

9 years agolast modified: 9 years agoThis is Pal, an Austalian Shepherd mix. She was the first dog I ever had as a friend. She was a very good dog, protector, companion and comforter. This was the beginning of a life long friendship with dogs. The year was 1955 or 56 in East Templeton, Mass. I am in the dark coat. My twin sister is in the light one. (Click to enlarge.)

Sissy (grandma) we brought Sissy home from my MIL's house to get her fixed and let her heal. That was in December lol Husband doesn't want to take her back. I don't either but we already have a lot of animals as you can see lol
Theodore and Pookie are our outdoor kitties. They don't belong to us but they think they do and we feed them and love on them.

9 years agoThis is Sarge, our chocolate lab who is getting in in years. We adopted him when he was approximately a year old. We have had him over 10 years. He loves to sprawl (yes he's mostly lying on 2 beds) and gather his toys around him.

"Bird"--let me tell you, doves live a long time. Not sure of his age, between 15 and 18 as a guess.
Sure have enjoyed everyone's pets. They do enrich our lives, bring us closer to nature.

9 years agolast modified: 9 years agoOf course you have all met my granddog. My other pet wouldn't come out for a pic, it is tiny and hard to see anyway. That would be my pet spider (as DH calls it) that lives in the corner of the baseboard by the front door. That little guy catches all kinds of bugs that manage to get in somehow. The evidence of his work, legs, wings, etc. litter the floor under his hidy hole. My pet spider is a keeper too.

- 9 years agoSummer, this is our little Trixie we rescued from a shelter. She was also labeled "not adoptable". She had been abused before being picked up as a stray and was terrified of men. I was avolunteer at the shelter and the second day she was there I sat down outside her cage and started talking to her. She crawled over and after a few minutes she licked my fingers sticking through the cage. I took her home that day and we had her for fourteen wonderful years. She became friends with my DH after a few months but was still afraid of other men.

My sweet Garfield kitty he was over 20 years old when kidney disease took him from me. He was amazing. He loved to lay with Voodi one of our Great Danes. They were besties. I caught them playing kissy face.

He was such a handsome fella. He was never a big kitty he stayed petite.
9 years agoI have loved seeing everyone's pets. All so adorable and precious! Thank you to all who rescue! I've posted it before, but here is my dog, Tricia, and "Baby", the raccoon she raised.
Another picture of "Baby" when she was a little older....getting big enough to crawl out of the box.
I don't advocate keeping wild animals for pets...in fact, Baby Coon didn't want anything to do with me. Tricia was her "mother" and I couldn't even handle her after a little while. She was released here (when she was ready to go....I thought she would NEVER be ready....and she is still here. She is now 4 or 5 years old.
This is Pig Newton, who is about 12 now. He isn't a pet that I actually "pet" but I do hand feed him. A friend of mine gets Pepperidge Farms bread donated to her and she gives most of it to me. Pig Newton gets all of the Cinnamon Swirl. The dog in the background is Butter, but can't tell which cat is there with him.
My other rescue horse, Bane.
