how to degrease a vent hood duct flapper valve?

We have a Thermador professional style vent hood with a roof mounted blower. At the top of the hood behind the grease baffles there's a large butterfly check valve / backflow preventer where the big 10" exhaust duct attaches. Over the years this appears to have come into contact with enough grease that it's become sticky and doesn't always open when the blower turns on. I can reach up with a long pair of tongs and poke it open, but obviously this isn't ideal.

Any suggestions on a way to properly degrease this thing? I'm over 6 ft tall and need a tall step stool and some serious body contortions to reach it, so this isn't a case of "easy to reach with a rag". There's also a lot of sharp metal edges up there, so blindly scrubbing isn't a good idea either.
