Matzo balls! Do you make 'em?

Growing up, I loved matzo ball soup. As a mom, I made it for my own kids. But it's been quite a while now. I recently ran across matzo ball mix at the store. I'd always made mine from scratch, and it was easy enough, but I didn't see any plain matzo meal that day so I bought the mix. It was a disappointment--ridiculously salty, and flavored in an unfamiliar way. I found them inedible.

So I found plain matzo meal in another store and made matzo balls the other night. They were so good that I gave most of them to my daughter-in-law and made another batch for myself. I put mine in chicken broth, and my DIL used a vegetarian "chicken" broth. She enjoyed them, and said our 3-year-old pronounced them "Yummy!"

Yup! I cannot stand the pre-made mixes, way too salty. And you still need to add water, eggs and oil to those mixes, so what's the point? Mine are the fluffy, floating kind. Yummy is right!

1 cup matzoh meal

1/2 cup water

4 eggs, beaten

1/3 cup oil (canola, corn)

salt and pepper, as desired

mix all ingredients together and refrigerate at least 1 hour-several hours or overnight works too. When ready to cook, bring salted water or chicken broth/soup to a low boil and form mixture into small balls. (I use a cookie scoop) gently drop into liquid. Should make about 18. Cover partially and cook for 20 minutes. I serve 2-3 per bowl depending on whatever else I'm serving. Note: as mixture is cooking, it will absorb some of the liquid, so if you're cooking in soup, it will reduce the amount of soup available, but the flavor is better than just salted water.

Wow, jan, you make me blush! I'm glad you like my gardens and I'm sure that photo selectivity makes them look even better than they really are. I love my gardens but have always thought it was more a beauty as in *the eye of the beholder* more than anything else!! I have much to report but no time just now. We are set to take our grandboys to see the latest 'Winnie the Pooh' movie tonight! I have taken a lot of update pix and it will take me some time to upload them to Photobucket, but don't give up on me! Les--I agree with you, all our dogs are show quality, even if it's our own *show*!! And thank you for your kind thoughts coming my way about our small trauma this summer! north53, please let us know how your hosta fared with the Ash coming down!! I bet your arborist did do a good job, afterall!! Just have to add, tj, (I became off-topic with our dog pic) I agree with you--Standard Poodles should not be presented as foo foo dogs at all. We are amazed at Callie's agility and speed and predatory inclinations! Wow--this is NOT a foo foo or froo froo dog, although she can be quite the prissy, I must say! The froo froo cuts were originally designed to insulate the joints of the dogs as they dove into the cold waters after the duck kills! The shaved down areas were to facilitate fast swimming but the joints needed the protection of the longer coat. I prefer the puppy or lambs' cut myself, but we needed to 'clear' her coat to allow the steel-gray color to begin to be more apparent. They go through a brown or chocolate color stage first, then gradually the 'blue' that becomes their final coloring at about 2 yrs. More later...

Recipe for sinkers/matzo balls?

I don't know why you haven't gotten any replies to this. I make floaters so I won't post a recipe. I may be wrong but I think the difference between floaters and sinkers may lie not in the recipe, but in how you form the balls. My MIL's are definitely sinkers, and large ones. Maybe the size of a baseball. I think the difference between hers and mine is that she packs them densely when forming them. I just scoop shapeless blobs into the soup with no packing at all. I think the more tightly and densely the balls are packed, the more likely they are to sink. Like I said, I may be wrong so hopefully others will comment.

Iva cake balls are pretty easy to make, and actually yummy if you use a good frosting. I'm bad with recipes, even worse trying to explain but here is what I do. I make a 9x13 cake (I used a box mix following the directions then I added an extra egg, dry pudding and about 1 cup of sour cream.) after it is baked and cooled I crumble it up pretty finely, I make a buttercream frosting, using real butter a bit of cream cheese, and a few tablespoons of whipping cream, cream them together well in a mixer and add about 2cups of powdered sugar, or till it is a pretty stiff frosting. Then with food service gloves I smoosh it all together really good, then roll into balls, place on waxed paper on cookie sheets and chill for a few hours. once you have the cake balls you can do lots with them but to make the turkeys I melted a bag of Guittard dark choclate melting wafers, with about 1 tsp of Crisco,Pour the choco into a small deep bowl so you can dip the whole ball into the chocolate. I used stik pretzles for the legs, and actually there is a 3rd leg in the back to make them stand up,its best to place the legs before chilling, then using the legs to hold onto, dip the cold balls in the chocolate,move the ball around to get the chocolate to cover the whole thing, then (this part is tricky)stand them on the waxed paper cookie sheets. The tails are as Kay says candy corn, I was going to use boston bean candies for the faces, but DH ate them first, so I looked thru my cupboards and found starbursts, so I melted them a bit in the micro and shaped them into the face and red thing. I used food markers for the eyes. dip the small tips of the candy corn into a bit of chocolate and press onto the ball until it dries, then do the same with whatever you use for the face. It depends on the type I guess for me. If they are lacy and pretty I call them panties. If they are the cotton ones with no lacy pieces just everyday wear, not the I have a date or special occasion ones ( you know what I mean) I call them underwear.

Marilyn Sue, the taste is delicate--hard to describe. Maybe Blubird or Rhizo can help me out! If you've ever eaten matzos, the crackers, they taste like that somewhat. And then they take on the flavor of the soup. The texture is fluffy, bready . . . I'm not doing very well with this description. LOL

Lighter than biscuit dumplings, less "bready ". Somewhere I even have recipes for pink and green matzoh balls. I've never made them, but they sure do look pretty.

I make them from scratch (with matzo meal), but I cheat -- I make mini matzos! They are bite sized so I don't have to chase a big one around the bowl, carving it up.

The Jewish physicians I worked for saw me eating my mini-matzo soup at work and they just shook their heads! However when given a bowl of their own, they liked my recipe!

Yes, I make them, but not very often. I make the 'meal' from crackers either in the Magic Bullet or food processor. I add spinach which has been chopped up in the processor.

Not like a biscuit dumpling...different texture, but bland like that. No I don't make them. My DH isn't a big soup eater and I like just about any soup. He eats Matzo crackers....so many...he got tired of them.

I miss Philadelphia pepperpot soup.

Nicole, is that the soup made with tripe? I had it years ago. Liked the flavor, but not the texture of tripe. :-)

Yes....cow tongue is better.... :0) Hopefully it's not one of those memories where you try it again and can't stand it. right...

I dislike dumplings a great deal but love matzo ball soup. I make mine with a little baking powder, onion and garlic powder, and schmaltz. OMG, so light and flavorful!
