Sherwin Williams Paint Advice Needed - Paint Line and Sheen Questions

We are building a vacation home and the builder's paint contractor uses Sherwin Williams exclusively. At first they proposed ProMar 200 and now, after hearing that is not a durable paint, we are thinking of moving up to Cashmere.

Couple of things I could use thoughts on --

  1. Is SW Cashmere actually a durable paint, and will I be able to wipe stains from the Flat sheen?

2. What sheen is preferable for the bathrooms? In addition to Flat, it comes in Low Lustre, Pearl, and Medium Lustre. (For comparison, I have Ben Moore Eggshell in bathrooms and don't find it to be overly shiny).

3. For the bathrooms, do I need to be concerned about water drips staining the walls and will I be able to wipe them (in Low Lustre, Pearl, or Medium Lustre)?

Any other thoughts on using Cashmere are also welcome; we're upping the price for paint by about $500 so not a ton, but it's still an investment and I want to make sure it will be worth it. (Using an even higher level - like Emerald or Duration - is not an option due to cost).
