Sprouting sees potatoes - can't plant just yet

I have some seed potatoes. It was 17F outside this morning. I do believe I can get them planted within a week or two, I can't really plant them this weekend. Planting during the week is a lost cause because it's dark by the time I get home…

So two questions.

1. If I stick them in the fridge for a week, will that slow them down enough without hurting them?

2. I've read that you shouldn't let the sprouts grow in the dark. Most of what I read is referring to one-foot-long white sprouts, you can't use those, but if they've sprouted around an inch, (in darkness) is that OK?

Should I still set them in the light for a couple of days before actually planting them and let the sprouts green up? I understand while foot-long sprout is bad, but, since you plant them 2-3 inches under the dirt anyway, I can't imagine a 1 inch sprout that hasn't had light exposure is that big of a deal, since they wouldn't get light on the portion under the soil.
