Need advice for vanity side panel repair

We are keeping our MB vanity, but it used to be joined to our tub deck which housed a jetted tub with an access panel inside the vanity. We are putting a freestanding tub now and need advice as to how to repair the side panel of the vanity. Pictures below. We butted and glued two melamine panels to seal the hole because my initial though was to tile that side since the tub will be there. I don't really want to tile that any longer but am not sure how to repair it. Should I wood fill the gaps and paint that side panel a similar color as the wood? You can't see this side unless you're in the tub. I also thought of putting a maple skin on that side and put a strip of maple veneer on the front side (where the doors are) to conceal the seam. The top exposed strips (that you can see right under the counter) will be maple boards. Thoughts and advice appreciated.
