Sweet Potato and Roasted Red Onion Latkes

I'm not saying this is unique because the latke concept is ubiquitous, but I just made this up. :) REALLY good. As usual, my write up is for those who don't really know how to cook. For those who do, this should suffice (skip the rest): Chop roasted red onions and add to sweet potato latkes.

Written out as a recipe:

Sweet Potato and Roasted Red Onion Latkes

  • 2 softball sized red onions or equivalent, sliced about 1/4" thick.

  • 2.5 lbs. sweet potatoes peeled and grated (large holes on box grater or similar on FP)

  • 5 large eggs, beaten

  • 1 cup gluten free flour or potato starch

  • Scant 1 tsp. salt

  • Approx. 1 tsp. pepper (to taste)

  • Oil(s) for roasting and frying

Allow sweet potatoes to weep and press out excess water as thoroughly as possible. Chilling helps.

Drizzle the onion slices with oil (I used lite olive oil) and roast in a single layer on a baking sheet. I used parchment paper and did them on convection broil at 375° F for about 40 minutes, but any way you roast or grill them will come out the same. Do them until they get really brown and are just beginning to look like they're going to char.

Chop the cooled onions and mix them with the drained grated sweet potato. Combine the other ingredients and add to the onion/sweet potato mixture. Mix well and chill for several hours. Pour off excess liquid.

Heat oil (I used safflower), about a quarter inch deep, or however you prefer, in a frying pan. Use a small scoop to portion the mixture. Press between palms to form a patty and squeeze out any remaining liquid. Lay in the pan. When the bottom gets good and brown, flip (a thin solid pancake turner works best) and cook until brown. Lay on paper towels (Viva) to catch excess oil.
