Comments (7)This is the only one I have tried. My family likes it. Hash Brown Casserole Preheat oven to 350 degrees. 1 - 32 oz. hash browns-southern style 1 stick butter, melted 1/2 cup chopped onions 1 teas. salt 1/2 teas. pepper 1 can cream of chicken soup 2 cups sour cream 2 cups cheddar cheese 1 pkg. onion and garlic croutons 1 stick butter, melted Mix first 8 ingredients together. Pour into 9X13 baking dish. Crush croutons and mix with butter. Put this on top of casserole. Bake, covered, at 350 degrees for 1 hour. Uncover last 15 minutes. Can divide into 2-3 casseroles before baking and freeze. If freezing, do not put crouton mixture on top. This came from my step-mother. She uses crushed potato chips on top for some crunch. Don't forget rice - shredded chicken with some broccoli or spinach and a creamy sauce with or without cheese is nice. My parents like ground beef and its easy to eat - here are some that they like and I like too. Meat And Potato Loaf Easy meatloaf and potatoes in one dish Ingredients 4 cups thinly sliced peeled raw potatoes, 1/4 cup chopped onion, 1 lb. ground beef, 5 oz. can evaporated milk, 1/2 cup breadcrumbs, 1/4 cup chili sauce (or catsup), 1/4 cup chopped onion, 1 tsp. Worcestershire sauce, salt and pepper to taste Directions 1. Mix potato slices and 1/4 cup chopped onion together and place in greased 2 quart square baking dish. 2. Mix remaining ingredients together and spread over potatoes. 3. Decorate top with more chili sauce or catsup (if desired). 4. Bake 350* for 1 hour. Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Comments (6)I haven't made this but it's from the American Century cookbook & sounds really good: TAMALE PIE (serves 6) Cornmeal Crust: 4 cups water 3/4 tsp salt 1 1/2 cups cornmeal 2 TBL butter or lard (not shortening) Filling: 2 TBL bacon drippings or vegetable oil 1 medium yellow onion, peeled & chopped 1 small green bell pepepr, cored, seeded, chopped 1 1/4 lbs lean ground chuck 1 TBL chili powder 1/2 tsp ground cumin 1 cup canned crushed tomatoes (I'd use Ro-Tel) 1/2 cup beef broth 3/4 tsp salt or to taste For the crust: Preheat oven to 350°. Grease 2 1/2 qt casserole; set aside. Bring water & salt to boiling in a medium heavy saucepan over high heat. Whisking vigorously, add cormeal gradually & continue beating until thick & smooth; beat in butter. Spoon 3/4 of mixture into casserole & with spoon, press over bottom & up the sides. Set aside. OVERNIGHT CHICKEN/MACARONI CASSEROLE 2 c. uncooked macaroni 2 c. milk 1 can cream of mushroom soup 1 can cream of celery soup 1 can mushrooms 2 c. diced, cooked chicken 1 sm. onion, chopped 1 sm. can pimento 1/2 lb.
