Help me find a recipe for a 'bready' tapioca pudding?
Comments (2)How about something like this? No egg whites, so it seems to have more of a "custardy" texture, and you can replace some or all of the white sugar with your Turbinado sugar and add the PP Spice to taste. 3 cups whole milk 1/3 cup small-pearl tapioca (not instant) 1/2 cup granulated sugar 2 large egg yolks, lightly beaten 1 vanilla bean, split lengthwise, seeds scraped and reserved 1/8 teaspoon fine salt INSTRUCTIONS Place 1 cup of the milk and the tapioca pearls in a medium saucepan and stir to combine. Let the pearls soak uncovered at room temperature for 1 hour. Add the remaining 2 cups of milk, sugar, egg yolks, vanilla seeds, and salt and stir to combine. Place the pan over medium heat and cook, whisking frequently, until the mixture just comes to a simmer, about 10 minutes (do not let the mixture boil). Reduce the heat to low and cook, whisking frequently, until the mixture thickens and the tapioca pearls are softened and translucent, about 15 minutes. Serve warm (the pudding will thicken as it cools). Place any leftovers in a bowl, press a sheet of plastic wrap directly onto the surface of the pudding to keep a skin from forming, and refrigerate for up to 2 days....See MoreLOOKING for: Carrot and raisin pudding with hard sauce
Comments (4)I made the recipe posted by rusty_ns for T&T Steamed Christmas Pudding two days ago. It's GONE! Wonderful.... I'm making it again tomorrow for more holiday friends! For a bit of background, some time ago I spoke with my 80 y.o. mother and asked if there was anything she had not had in a long time that she'd like to have me make for her. She very quickly responded "My mother's carrot pudding." After considerable discussion with my mother, I did exhaustive web searches and finally came upon this recipe, which seems to be exactly the recipe my grandmother made for my mother and my mother's grandfather. The joke was that the grandfather absolutely hated carrots but loved the pudding (nobody ever told him it contained carrots!)... My mother had not had this dish in over 60 years, since her mother passed away (unfortunately, I never knew her). The most difficult part was locating suet. I secured some and easily made this recipe. It was extraordinarily delicious and rich!!!!!!! I thought my mother was levitating when she first tasted it. She said it was EXACTLY what she remembered as a child. What a compliment! The look on her face was priceless. I want to personally thank rusty_ns for providing this top-notch recipe. Believe me, not only do I thank you, but my 80 year old mother does, too! Bless you and thanks again! Dave drdave19@bellsouth.net...See MoreSuet Pudding
Comments (12)Suet Pudding or as we called it, "Johnny Bull" was a must at Christmas, Thanksgiving and Easter dinners when I was growing up. The recipe below I just copied from Cooks.com. It is just like my Mom made, but she didn't use a lemon sauce. Our sauce was a slightly sweet sauce made with cornstarch, sugar and water and flavored with nutmeg and cinnamon. I never copied Mom's recipe, as I know how bad it is for our health, but I do sometimes long for it on those holidays. SUET PUDDING (JOHNNY BULL PUDDING) 1 c. chopped suet (kidney suet) 3 c. flour 2 tsp. baking powder 3 eggs 1 c. sugar 2 c. cooked raisins 1 tsp. each ginger, cinnamon, allspice 1/2 tsp. cloves 2 c. milk Mix 1 cup flour and suet together with hands until all strings are worked out of suet. Cream sugar and eggs together. Sift flour, baking powder and allspice together. Add to cream mixture and alternate with milk and flour/suet. Last add raisins and mix well. Place in a cloth bag and steam over hot water for 3 hours. Serve with sauce. LEMON SAUCE: 1/2 c. sugar 1 tbsp. flour 1 tsp. butter Juice of 1 lemon Grated rind of half lemon Pinch of salt 1 c. water Mix all ingredients and cook a few moments. Pour over pudding...See MoreA couple of tomato questions. Ordering from Johnny's.
Comments (30)For all you tomato lovers, I'm adding a few links for tomatoes. If you need a container tomato, I once tried Red Robin and it grew about a foot tall and produced an amazing number of tomatoes much larger than cherries. In fact I was amazed at their size and number for such a small plant: Dwarf container tomatoes The best paste tomato I ever grew from seed was sent to me by an Italian relative. The plants were literally dripping with tomatoes they were so loaded. Unfortunately it was the year we had the late blight, so I cannot attest to their flavor. But in terms of sheer production, I just never saw so many on a plant: Seeds from Italy-Rio Grande Tomato And this site offers heirloom and open-pollinated seeds: Victory Seeds And just as it says, this site is devoted to Totally Tomatoes: Totally Tomatoes Happy Gardening! PS: Apparently my link to Victory Seeds failed, but you can still contact them as this is the actual name of the company....See More
