Limelight Tree - deadhead/prune

I'm pretty new to this whole having to take care of plants thing so sorry if I'm asking stupid questions...

I planted a limelight hydrangea tree earlier this year. It appears to be happy and have done well - except we had a very hard rain earlier that seems to have bent some of the branches downwards.

My question is what to do now that it's starting to get towards winter. Do I remove the flowers? How long of a stem do I leave? (I have someone interested in the dried flowers for crafting). Do I prune any of the other branches? Should I wrap it in burlap to keep the branches upright for the winter? I've seen lots of comments about pruning half the height - but that's got to be for bushes, not trees.
