Here's the recipe, From the book Gluten Free, Sugar Free Cooking by Susan O'Brien: - 1/2 cup butter or butter substitute (room temperature) - 1/3 cup plus 1/8 cup agave or fruit sweetener (room temperature - 1/4 tsp vanilla - 3/4 cup brown rice flour - 2/3 cup pecans or walnuts, chopped finely - 8 oz cream cheese, softened - 1 egg - 1/2 tsp vanilla - 1 lb pears, peeled and sliced (fresh if possible. I had to use canned which I got from Whole Foods - it's in fruit juice, not syrup. Drain if using canned) - cinnamon Preheat oven to 350 degrees. Crust: Mix together butter and 1/3 cup of agave and blend until light and fluffy. Add vanilla, flour, and nuts. Press into bottom of 9 inch square pan and bake for 10 minutes or until set. (Probably should spray the pan if it's not non-stick? I used parchment paper). Let cool for a few minutes. Filling: Mix cream cheese and remaining 1/8 cup of agave until thoroughly mixed and fluffy. Add egg and vanilla and beat until smooth. Pour over crust and smooth out. Arrange pear slices on top of filling. Sprinkle cinnamon on top (to taste). Bake for 30 minutes. I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. I don't mind it in party spreads either. I put it under jam and on toast and bananas and apples all the time, but don't use it in "recipes." I can't wait to see what we get here! Peppi, I had another piece for breakfast and it was still good, although it's no longer hot here. Ham would be good in it too, I'm sure, maybe even chicken. Nancy, that's what I like about it, it's so easy to just use up what's on hand and it still comes out good. Your fruit salad sounds like my fridge, I'm always trying to use something up. Lars, it is basically a quiche. If you can get some nice tomatoes, it's definitely worth making, though. I still have a table full of tomatoes in the back yard, the last of the season as the vines are dead with no rain for a couple of weeks now. I'm thinking I'll probaby have time to make one more of these before the tomatoes are gone. Annie
