Can seeds be dried off the stem?

I couldn't stand to look at the dying stems of my drumstick alliums sprawling everywhere anymore, so I cut them down and saved the dried blossoms to direct or winter sow. Now I read that I should have waited until LATE summer or autumn to harvest those for direct or winter sowing. Will my seeds be viable if I ripen in the sun on a tray? The stems were brown about halfway up but not all the way to the blossom. I guess I have nothing to lose by dropping them around the areas I'd hoped to have them, but it would be nice to know how much of a chance I have of successful propagation. I wonder if cutting them down before they were totally dried even jeopardized the chance of this year's coming back. I did let my big allium dry completely and left the big blossom to dry on the ground beside it. Hope that was right. Thanks for sharing whatever you know about the finer points of allium propagating..
