Comments (5)Went ahead and bought one. It's called bush baby and you're supposed to pick at 4-8". We'll see if that happens! Comments (26)If you don’t want the work of a quiche, you can make a frittata. I make a side dish for dinner with cubed zucchini and chopeed onions, sauteed in a little olive oil until translucent, then add a can of diced tomatoes (or a bunch a fresh ones if I have a glut). Comments (42)We make zucchini bread but mostly use just the green skin with some of the pulp for a more vitamin and phytochemical rich rendition. Organic, very fresh zucchini are best. An Indian friend used to cur zukes in half lenthwise. She scooped out most of the pulp and mixed sime of it with cooked rice, nuts, herbs, curry seasoning then re-filled the zucchini halves with this mixture. Baked a while.
