Central Ohio Fall Plant Swap/Potluck-September 8th, 2007
Comments (84)Hi everybody, Sorry I didn't get these pictures posted earlier, 'puter has been acting testy and I still don't have email working, but at least I'm back to posting! Here's some pics... Margie, I brought the Chocolate Dip, just love the foliage. They come true from seed, I started a pack of 20 seeds over the winter and 4 came up but one died from overwatering and I planted out 2. It's an outdoor plant, supposedly perennial, full sun to part shade. I don't know how it will do with reseeding, I was afraid of the name Hawkweed so I made sure to collect as much of the seed as I could! Hope you enjoy it!...See MoreNeed Potluck Inspiration/Ideas
Comments (24)I have an annual potluck to attend on Halloween day. I have taken the paella salad posted above. It is delicious and everyone loved it. I did add fresh garlic to the rice (I used basmati). This year I have decided on Ann's Greek Meatballs. Home Cookin Chapter: Recipes From Thibeault's Table Greek Meatballs With Avgolemono Sauce ===================================== These are extremely tender and flavourful meatballs 1-1/4 pounds Lean Ground Beef 1/2 pound lean ground pork 2 slices of bread, made into crumbs and soaked with milk 3 garlic cloves 1 small grated onion 2 tablespoons chopped parsley 1/2 to 1 cup chopped spinach, squeezed dry 1 tablespoon chopped mint 2 teaspoons grated lemon zest 1 teaspoon dried oregano 2 eggs 1/3 cup uncooked rice Salt and pepper to taste Option: Add some fresh chopped dill as well 5 cups chicken broth Sauce 2 egg yolks 1 whole egg Juice of 1 large lemon (1/4 cup) 1-1/2 cups of broth (from cooking meatballs) Makes approximately 48 meatballs. Mix the two meats together well and add the rest of the ingredients and mix well using hands. Saute a small amount to taste for seasoning and adjust seasoning as needed. Form into meatballs the size of walnuts and saute until brown. Drain on paper towels and then add to a pot of chicken broth. Simmer for 40 minutes until tender. Remove meatballs from broth. Strain broth and reserve 1 1/2 cups. Return broth to stove and bring to a boil. Beat egg yolks and egg with lemon juice and slowly whisk the hot broth into egg mixture. Return sauce to sauce pan and heat on low stirring until sauce thickens. Do not bring to a boil. Add meatballs and continue to heat until meatballs are hot and coated with sauce. As an alternative to the egg/lemon sauce, try doing this instead: Make a roux with butter and flour, add the chicken stock that you cooked the meatballs in, simmer, add some of the hot sauce to an egg yolk and then slowly stir the mixture back into the remaining sauce. Add lemon juice. Add the meatballs and simmer on low for a few minutes. Do not boil if using the egg yolk....See MoreNeed potluck main dish recipe
Comments (13)I've done pinwheel appetizers for potlucks, pretty easy. Can do any type of sandwich filling like refried bean, lettuce, cheese and salsa, or hummus and cukes and lettuce, or ham or turkey and swiss, with some fancy mustard, vegetable cream cheese, etc. Spread on a large wheat tortilla, mix colors if you like, roll up and then slice into short sections, turn on the side for the pinwheel effect. Is easy to make and usually a hit. Here's my bean/cornbread crockpot casserole recipe. Note: the cornbread part which bakes on top of the stew takes at LEAST an hour so make sure you allow enough time for that. Serves 6. 1 med. onion--chopped 1 med. green pepper--chopped (can use a roasted skinned poblano) 2 cloves garlic or 1/4 tsp. garlic powder 1 16oz. can red kidne beans, undrained 1 16 oz. can pinto beans undrained (I don't like pintos, I use black beans) 1 16oz. can diced tomatoes 1 8oz. can tomato sauce 1 tsp. chili powder 1/2 tsp. black pepper 1/2 tsp. prepared mustard 1/8 tsp. hot sauce or use chopped jalepenos if you have them, probably 2 TBLSP or to taste. Top with 1/2 cup yellow cornmeal 1/2 cup all purpose flour 1 1/4 tsp. baking powder 1/4 tsp. salt 1 1/2 tsp. sugar 1/2 cup plus 1/8 cup milk (can use soy) 1 egg beaten 1 TBLSP plus 1 1/2 tsp. veg. oil 1/2 cup (small can) cream style corn. Grease the crock pot. Cook the onion and green pepper and any fresh jalepenos if you are using them, in a small amount of oil in a skillet. When finished, transfer to the crock pot. Stir in all the other ingredients, including the seasonings. Cover and cook on high until it comes to a boil and then reduce to low and cook for 1 hour. You can cook it on low for as long as 8 hours. Meanwhile, mix together the other ingredients including the creamed corn. When the stew is boiling away, spoon on the cornbread topping and cook on high for 1.5-2 more hours. Could also cook on low for a longer time. Note: you could brown some meat and add to this if you wanted to, along with the onion and pepper, but drain it first. Adjust the chili recipe part to your own particular tastes. For example, I would probably add fire roasted tomatoes and some V8 juice for body and flavor, which is how I make my chili most of the time. You can double the recipe if you have a bigger crockpot....See MoreNew Homeowner in need of Front Patio ideas!
Comments (2)How nice to have two outdoor spaces! Have you peeked to see what any of the neighbors have done? That might give you an idea of what is less likely to be stolen. To start with, several strategically placed large (evergreen) plants would be nice for some privacy and greenery....See More3katz4me
