Kale question

Have been harvesting beautiful, productive lacinato kale since mid-March, but now with 90 degree temps things are really slowing down. Some of the plants are still producing small leaves while others look like nearly-dead stalks.
Last year I pulled them up at this point, but since heard that had I left the plants alone they would have started leafing out again with cooler temps and produced a bountiful fall/winter crop without replanting. True?
I'm thinking I'll cut back the stalks to 2" and keep them watered and fed. Is this how it's done? Thanks.
