Durio zibethinus is the only species available in the international market: other species are sold in their local regions. There are hundreds of durian cultivars; many consumers express preferences for specific cultivars, which fetch higher prices in the market. Each cultivar has a distinct taste and odor. More than 200 cultivars of D. zibethinus exist in Thailand. In recent times, Songpol Somsri, a Thai government scientist, crossbred more than ninety varieties of durian to create Chantaburi No. 1, a cultivar without the characteristic odor, which is awaiting final approval from the local Ministry of Agriculture. Another hybrid, Chantaburi No. 3, develops the odor about three days after the fruit is picked, which enables an odorless transport yet satisfies consumers who prefer the pungent odor. In Malaysia and Singapore, most consumers prefer the fruit to be as ripe and pungeant in aroma as possible may even risk allowing the fruit to continue ripening after its husk has already cracked open. Comments (7)I'm going to be the contrarian here. I love to experiment with different foods--There is probably no food that I really dislike--except the durian. I will never forget the day I saw one hanging in an Asian fruit market. I immediately purchased one and placed it in my Florida room. It was in a netted bag and looked fascinating so I left in netted bag hanging in the Florida room. It reminded me of some kind of sea creature. Well, in two days it smelled like one. Actually, smelled like rotting onions. A friend came over and asked what animal died. I explained it was an exotic durian fruit and ever the experimental taste tester, I proceeded to cut it open and eat it. It had this custard like texture and embedded in the creamy custard were big, black seeds. I saved the seeds hoping to plant them and be the first in my neighborhood with a durian tree. Well, the taste was unique! Like a cross between onions, anchovies, and something sweet (maybe bananas). It was the combination of tastes that I found REPULSIVE. My first thought was why did God ever create a fruit like this--I thought it was downright vile. Never planted the seeds. Still, if you're into tropical fruits, you have to eat a durian.
